Easy Semi-Homemade Coconut Milk

An easy, cheap and healthy alternative to commercial non-dairy milk. This diluted coconut milk has many health benefits without the additives.

  • 1 can Trader Joe's light coconut milk
  • 2 cans of filtered water
  • ¼ teaspoon salt
  • ½ teaspoon vanilla (optional)
  • sweetener, such as honey, maple syrup, blended dates (optional)
  1. Mix all ingredients in a bottle or pitcher.
  2. Refrigerate and enjoy, gently shaking before each use.
  3. Makes about 5 cups.
