Paleo Apple Cider Waffles

Paleo apple cider waffles are full of apple cider donut flavor. Fluffy on the inside, crispy on the out. Gluten free.
Recipe type: Breakfast
Serves: 4-6 waffles
  • 1 packed cup almond flour
  • ½ cup tapioca starch
  • 2 teaspoons baking powder
  • 2 tablespoons coconut sugar
  • ¼ teaspoon salt
  • 2-3 teaspoons cinnamon
  • 1 large egg
  • ¼ cup + 1 tablespoon coconut oil
  • ½ cup of apple cider (no sugar added)
  • 1 teaspoon lemon juice or apple cider vinegar
  • Cashew glaze, optional
  1. Pre-heat waffle maker.
  2. In a high powered blender, mix all ingredients until a smooth batter forms.
  3. Brush (or spray) waffle maker with oil and pour batter onto pre-heated griddle according to waffle maker instructions. The cooking time will vary - usually between 3-6 minutes per waffle.
  4. Top with glaze if using.
