Paleo apple cider waffles are a healthy interpretation of apple cider donuts. Made with real apple cider and cinnamon, they are great for a fall weekend breakfast or brunch. If you don’t have store bought blanched almond flour, you can easily make it with raw almonds in a high speed blender though the texture may be a bit crunchier. Top with freshly sliced apples and pure maple syrup or cashew glaze.

WHY IT’S HEALTHY// These apple cider waffles are paleo and gluten free. Made with almond flour, these waffles are full of healthy, satiating fats and relatively low in carbohydrates. Almonds are full of healthy polyunsaturated fats and linoleic acid and high is vitamin E and some B vitamins. //

Paleo apple cider waffles are full of apple cider donut flavor. Fluffy on the inside, crispy on the out. Gluten free.
Recipe type: Breakfast
Serves: 4-6 waffles
  • 1 packed cup almond flour
  • ½ cup tapioca starch
  • 2 teaspoons baking powder
  • 2 tablespoons coconut sugar
  • ¼ teaspoon salt
  • 2-3 teaspoons cinnamon
  • 1 large egg
  • ¼ cup + 1 tablespoon coconut oil
  • ½ cup of apple cider (no sugar added)
  • 1 teaspoon lemon juice or apple cider vinegar
  • Cashew glaze, optional
  1. Pre-heat waffle maker.
  2. In a high powered blender, mix all ingredients until a smooth batter forms.
  3. Brush (or spray) waffle maker with oil and pour batter onto pre-heated griddle according to waffle maker instructions. The cooking time will vary - usually between 3-6 minutes per waffle.
  4. Top with glaze if using.

    Holding on to this one for the fall! Although…I do have a ton of apples on my counter right now. Waiting for my waffle iron to be delivered tomorrow!! Can’t wait!!
